Cold Cuts and Cheeses
Inside the shop is a counter dedicated to our first passion: the traditional cold cuts and cheeses of the kinds Duilio Pasqualetti first selected in 1959. Today, Duilio's son Marco continues to offer a wide range of products, concentrating first of all on the Tuscan Designated Regional Products, such as prosciutto crudo, salami and finocchiona salami (with fennel seed), and wild-boar prosciutto and salami.
Also important are prosciutto crudo di Parma, cured 24 months, and the superb brisaola dei crotti, a lean salt-cured beef, lactose- and gluten-free and without chemical preservatives from Val Chiavenna of Lombardy.
Our selection also draws on the best cheese makers, with some of the stand-outs being grana padano, pecorino aged in caves, soft "shepherd's" pecorino, and water-buffalo mozzarella.
For our parmigiano reggiano we choose only rounds aged 30 months, from controlled and guaranteed producers.
Cold cuts and cheeses are sold over-the-counter, or by the slice to fill sandwiches and panini made on the spot. We can also prepare mixed selections with local artichoke hearts and mustards, served for you on the traditional Tuscan cutting board known as ‟tagliere”.
